My sourdough journey
I started my sourdough culture in June 2018. I just followed Google instructions Sourdough starter and voila!, I had a full fledged sourdough going in about five days.
Sourdough needs four ingredients:
- Flour - All purpose flour will do. You may experiment with other flours, such as whole wheat.
- Water - Clean, warm water is essential.
- Yeast - Wild yeast from the air will do their magic. Just make sure the environment is clean so that the culture does not attract the “bad” bacteria.
- Time - It is very important to recognize “time” as an ingredient. Baking needs a lot of passive time during which nature does its job and one just has to wait for it.
I believe everyone has a name for their sourdough. I call mine “Halasyam”.
Sourdough is not for everyone. It needs to be maintained, by a ‘feed-discard’ cycle every week. Ideally, you should use the discard to make some goodies. If you cannot make use it, you can throw it away.
